What is the right amount of pasta per serving?

Hi, this is the fourth lesson about cooking pasta.
A lot of people don’t eat pasta: they’re sure pasta is fattening. It isn’t true.
It’s true too much food is fattening and pasta is fattening when is too much.

If you follow these amounts per serving you can eat pasta with no consequence on your weight.

Dry pasta : about 70 g  (2 1/2 oz) per serving
Dry egg pasta: about 60-70 g   (2 – 2 1/2 oz)  per serving
Fresh pasta: 125 g  (4 1/2 oz)
Fresh egg pasta: 120 g  ( 4 1/4 oz) per serving
Filled fresh pasta: 120-140  (4 1/4 – 5 oz) g per serving according to the filling

If you have to prepare  a stock with little shapes of pasta : 40 g (1 1/2 oz). If use egg pasta the right amount is about 30 g (1 oz)

Eat pasta at lunch and be careful on the sauce. Prefer vegetable sauce to meat sauce. In the Italian cuisine there are a lot of fat sauces but there are also a lot of sauces made with fish and/or vegetables for an healthy diet.
Remember that Mediterranean diet is healthy.
